The washed lot shows Geisha at its most transparent — coffee blossom and honeysuckle on the nose, a flavour of jasmine, peach, and grapefruit, and a tea-like, elegant body lifted by a vibrant, sparkling acidity.
How It Was Made
Four measurements. Nothing added.
A gentle wash instead of a tank. The pulp comes off, a light rinse takes part of the mucilage, and the rest ferments gently on the bed as the bean dries.
The Gentle Washed Process
What it is
The cherry is pulped the day it is picked, then given a gentle wash that takes off only part of the mucilage. What remains dries with the bean on the raised beds. No tank fermentation: the ferment happens on the bed, slowly, as the bean dries.
Why it’s different
A classic washed coffee sits in a tank until every trace of fruit can be stripped away. Ours skips the tank and keeps a thin layer of mucilage on the bean, so it dries with a little more sweetness and body than a full wash, and with a clarity a honey does not have.

A tea-like, elegant body and a sparkling acidity. The coffee blossom, honeysuckle and jasmine are Geisha at its most transparent; the touch of peach and grapefruit is what the gentle wash leaves behind.
Brew It
A two-bloom pour-over.
A light, floral roast — two gentle blooms, then two even pours. Reward it with a slightly finer grind.
